Jota soup is a hearty, warming soup made with beans, potatoes, sauerkraut, and sometimes meat. It's a staple dish in Friuli-Venezia Giulia, especially during the colder months.
Add Unfiltered Organic Extra Virgin Olive Oil to a large saucepan over medium heat temperature. Add the onion and Flora garlic, and sauté until softened, about 5 minutes.
Add the can of Flora cannellini beans. Include the liquid.
Add the sauerkraut, potatoes, smoked sausage or ham hock (if using), bay leaves, thyme, and enough water to cover the ingredients. Bring to a boil, then drop the temperature and simmer for about 35 minutes or until the potatoes are tender.
If needed, add water or vegetable stock to create a soup-like consistency, and season with pepper and salt to taste.
Simmer on low for 10-15 minutes or until all the flavors have melded together.
Serve hot with a crusty bread on the side. Enjoy!
