Prepare the Ingredients:

  • Rinse the basil leaves thoroughly and pat them dry.
  • Peel the garlic cloves.

Make the Pesto:

  • In a food processor, combine the basil leaves, garlic cloves, and pine nuts. Pulse until the mixture is finely chopped.
  • Add the grated Parmigiano Reggiano and a pinch of salt. Pulse a few more times to combine.
  • With the food processor running, slowly pour in the extra virgin olive oil until the pesto is smooth and creamy. Taste and adjust the seasoning if necessary.

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. If using, add the diced potato and green beans to the boiling water with the pasta.
  • Reserve about 1/2 cup of pasta cooking water before draining the pasta.

Combine and Serve:

  • Return the drained pasta (and vegetables, if using) to the pot. Add the prepared pesto and a splash of the reserved pasta cooking water to help coat the pasta evenly. Toss until the pasta is well coated with the pesto.
  • Serve immediately, garnished with additional grated Parmigiano Reggiano and a drizzle of extra virgin olive oil if desired.
