Spaghetti ai Ricci di Mare

  • Start out by preparing the spaghetti. Cook for 20-25 minutes, or until the pasta is al dente, in a pot of boiling, generously salted water after adding.
  • Add a little oil to a sizable nonstick frying pan and sauté the shallot and garlic till tender while the pasta cooks.
  • Add the wine to the pan and leave to reduce by half, then add the sea urchin.
  • After draining, add the spaghetti to the pan and toss with the sauce to coat.
  • Incorporate the parsley last, then season with a little lemon.
